Beef and Stilton pie


I think this may have been the best beef pie I’ve made yet!  I found a wonderful recipe online from Jamie Oliver’s site and it’s Warwick Davis’ steak and Stilton pie, which will be linked in a mo!

The pastry is a quick suet and self raising flour affair, with a good egg wash and then baked in the oven.

I’d made the pie filling a few weeks back when we tried this the first time. The leftover filling was decanted into and ovenable pyrex dish, which I could be frozen.  Defrosted the filling this morning, removed the lid, added the pastry top and voila! A “lie” pie. =)

The original recipe uses a thyme infused pastry, which is wonderful too!

This filling does take several hours to cook and soften, but totally worth the effort.  I hope you enjoy it too.  Let me know in the comments if you’ve tried this before or are now thinking of giving it a go!

This was my first effort, deep filled “lie” pie, new potatoes and some roasted veg!
