Tuscan-style Tuna steaks with stuffed portobello

This is the first time we’ve tried this recipe.  We weren’t able locally to source some lightly smoked mozzarella so we made do with smoked cheddar, hardship ehh?!

The recipe we tried today is from The Food Network click here should you wish to have a look!  We served ours with a light rocket salad and some sun-soaked tomatoes, with rosemary and sun-dried tomato focaccia.  We also used sun-soaked tomatoes in place of fresh in the stuffing for the mushrooms, because we had some, so why not?!  The rosemary used was from our garden, but it will be a little while until our rocket is ready to harvest as it only got sewn from seed this week.

We both loved it! This will be cooked again, soon I imagine.  Hope you feel inspired to try it too!
