This may look like fashionable milkshake with a flake, but it’s better! Honest!
1 litre sterilised jar
400g raspberries (freeze them for a day and allow them to defrost if you can – this helps to soften the fruit, but you can also use fresh)
250g caster sugar
1 cinnamon stick
GIN! Cheap gin is just fine for this, no need to spend £35 on a bottle! I use the one from Aldi.
As you pour the gin into the sterilised container, you will see that the sugar starts to settle at the bottom of the jar. You will need to give the gin a good shake up in the jar daily for a few weeks to ensure all the sugar dissolves, storing it somewhere dark is better, inside a cupboard etc. Then just leave it for a few months, strain out the fruit and cinnamon stick using a muslin if you can, bottle into a standard necked bottle if you like and mix with your favourite tonic for a long drink!
You can taste this every week or so to decide when you like the flavour. You can remove the cinnamon stick after just a few weeks if you prefer. You’d also be able to substitute honey for the sugar, although I’m not sure what quantity would be a replacement on that one! I hope you enjoy!
