Blackberry, apple and bay gin steep

This is not one I’ve tried before.  The last time we did blackberries, we added a cinnamon stick to the mix and that’s lovely.  This is something new for me!

I’ve subbed honey for the sugar as that gives an interesting taste too.  This will be kept in the cupboard for 4 weeks, giving the jar a good shake daily for the first 2 weeks.  I’ll start a taste test after 2 weeks to see if any additional honey is required, I’m hoping not!

Recipe so far …

  • 300g blackberries, frozen then defrosted to start them softening (found a tub in the bottom of the freezer, hurrah!)
  • 1 large apple, washed, chopped roughly (no need to skin or core)
  • 3 tbsp honey
  • 1 bay leaf
  • Gin to fill the jar

If no adjustment required then 4 weeks from today, just the quick job of straining through muslin and getting it poured into a sterilised bottle.  Most fruit/alcohol recipes suggest consuming within 6 months from bottling… I’ve not had one last that long yet!
