Finger-licking Piri piri pork ribs with savoury rice


Cracking little dinner tonight inspired by a recipe for piri piri chicken from Immaculate Bite’s website and for their recipe please click here.

The savoury rice was made using leftover green pepper, fresh chopped plum tomatoes, onion, vegetable stock pot, cumin and ground coriander for the spices, along with a good helping of fresh cut chillies.   It complimented the ribs very well!

Quick salad on the side, red gem lettuce and spinach leaves.  Got to keep eating those nitrate filled greens to help with blood pressure!  This meal is about as healthy as we could get it without replacing the meat!
