Stuffed green peppers, Mexican inspired beef and rice mix


Sumptuous sweet stuffed green peppers cooked in the slow cooker today.  I was really naughty and threw together ingredients so I’ve done the best I can at remembering what I put in it!

Serves 4.
225g white rice, then cooked
4 green peppers, tops removed and used in the mix, and de-seed the middle.
500g beef mince, browned off (5% lean mince)
2 large onions, fine dice and saute to soften
2 sticks celery, fine slice
1 medium carrot, grated
2 x standard tins of chopped tomatoes
the tops of the green pepper, fine dice
2 tsp paprika
1 tsp cumin
1 tsp ground coriander
2 tsp oregano
1 tsp coriander leaf
3 garlic cloves, crushed (we like garlic)
Lots of fresh hot chillies, fine slice (we like these too, omit if not wanted)

Mix all the ingredients together, stuff the peppers and then into the slow cooker for 6 hours on low. (Salt and pepper to taste etc.)  Any leftover mince and rice mix, just pile around the sides as it will help the peppers stay upright.
