Ropa Vieja (Cuban Beef) Recipe from UK Slow Cooker group
900g beef brisket
1 tablespoon oil
500g passata (We didn’t have this, so used a standard tin of chopped tomatoes)
3 peppers diced
2 medium onion diced
6 whole cloves garlic diced
1 jar of green chillies 90g drained (Morrisons do them) (We used fresh chillies)
2 tablespoons tomato paste
2 teaspoons oregano
2 teaspoons salt
1 tablespoon ground cumin
1 tablespoon white vinegar
1/2 teaspoon chilli flakes
Handfull chopped coriander (save some for serving)
1 lime juiced (save half for just before serving)
2 limes cut into wedges (for serving)
Sour cream (for serving)
Brown the beef in the oil till u get a nice crust.. move to slowcooker.
Add all the ingredients but save half the lime juice
Cook on low for 7-8 hours or high 3-4
Shred the beef using 2 forks add the rest of the lime juice, mix the shredded beef back into your cooking sauce.
Serve over rice with coriander and top with sour cream, add some lime wedges too.
