Cherry and honey gin steep

One of the local supermarkets is selling large trays of cherries for a good price.  They are one of our favourite fruits and they have such a wonderful flavour!  The cherries on our tree have only just started to change colour, so this is a perfect opportunity for me to start a gin steep as an experiment on taste, so that when our are ready, I can make a perfect batch.  I haven’t made this particular steep before, but this is what I’ve done this morning.

1L Kilner jar, sterilised
450g washed and pitted cherries (the weight given is with the stones removed)
2 tbsp honey

I shall leave this for a few weeks and give it a taste.  It’s better to add less of your “sugar” at the beginning and adjust it to taste.

I’ve read that it’s good to leave cherries to steep for up to 6 months, but you will need to still check your jar regularly to make sure nothing is going wrong.  I have a good dark and cool cupboard to store these jars in, which adjoins a north wall, the temperature in it is fairly stable!
