Celebrating today hitting a second weight-loss target and for me, that means cake (albeit a little one)! Muffins fit the bill for this, they are easy to make, quick to bake and freeze well to boot!
Standard chocolate muffin recipe, plain flour, coco powder, baking powder, caster sugar, 1 egg, vanilla essence, milk and oil. I also added a small pack of dark chocolate chips and in the middle, a cheeky little nudge of peanut butter. As these only cook for 20 minutes, this worked really well, the filling stayed put!
I put a small amount of batter mixture in the bottom of the paper case, then added about 1/3rd tsp of crunchy peanut butter in the middle, then covered with the leftover batter.
Perfect little celebration cakes! The peanut butter stops this from being too sweet. We’ve shared with all the neighbours already, hubby and I had one each and a few are cooling ready to go in the freezer later.
