I’ve have had a purple inspired lunch today, with home made purple slaw and some “blushing pickled eggs” and home grown explosive ember chillies, absolutely divine!
The pickled eggs are from a recipe from Jamie Oliver’s “Every Day Super Food” recipe book. Here’s a link to the book on amazon (click here), but it’s available from many other places too. We’ve been making these eggs since we bought the book a few years back! They are a quick pickle and need to be eaten within a week, maximum of two and need to be stored in the fridge. They are made with red cabbage, red wine vinegar, star anise, cloves, mustard seeds and really good quality eggs. Love them!
The slaw I made today was using some of the red cabbage left from making the eggs, a grated small beetroot, half a red onion and some low fat mayonnaise!
Add some salad and a few slices of a purple chilli we’ve grown called “Explosive Ember” and you’re away!
All healthy, fresh ingredients, love it!
