We love a good curry and when nature gifts you massive marrows that are too large to stuff and have as a meal for 2, it’s time to get inventive!!!
The recipe we based our dinner on his here from the BBC Goodfood site. The marrow we had to use up was rather large, so we doubled up on all the ingredients and as we love them so much, threw in a can of chick peas too! (Obviously after we’d removed the tin, drained and rinsed them… my hubby’s humour showing up here…!) We also had some fresh green beans ready to use from the garden, so in they went too! Waste not, want not!
Hope this is a meal you give a go yourself, it’s fragrant and tasty. The 1 marrow we had made 6 portions of curry and it was also great on toast as a sneaky lunch!
